1/3 | cup | mayonnaise | |

1/4 | cup | salsa | |
|
|||
1 | tablespoon | minced, fresh parsley | |
|
|||
3 | cups | potatoes, cooked and unpeeled | |
|
|||
1 | celery stalk, thinly sliced | ||
|
|||
1/4 | cup | onion, chopped | |
|
|||
1/2 | cup | cheddar cheese, shredded | |
|
In a bowl, combine the mayonnaise, sour cream, salsa and parsley.
In a large bowl, combine the potatoes, celery and onion. Add dressing and toss to coat. Stir in cheese.
Cover and refrigerate for at least 1 hour to blend flavors before serving.
