Wash and peel the potatoes. Cut potatoes in 1/8- inch slices. Season with salt and pepper. In a covered skillet, fry potatoes in hot oil over medium heat for 10 minutes. Turn potatoes carefully. Cook, uncovered, about 10 minutes longer, loosening slices of potatoes occasionally and browning all sides.
Herbed Potatoes: Prepare pan-fried potatoes as directed above. The last 5 minutes of cooking, sprinkle the fried potatoes with 2 tablespoons finely chopped celery, 2 tablespoons snipped fresh parsley, 2 tablespoons finely chopped onion and 1/2 teaspoon dried oregano, crushed. Sprinkle potatoes with salt and pepper to taste.
